These adorable Lucky Charms St Patrick’s Day cupcakes are the perfect treat for a party or for your kids to take to school!
I wanted to come up with a fun St. Patty’s Day treat this year, so I decided on St Patrick’s Day cupcakes. Well, I came up with an idea to shape a shamrock out of mini marshmallows and put it on top of a cupcake. I thought it would be perfect because they even sell green colored marshmallows in those multicolored packs! Fast forward to they didn’t work out at all how I imagined them in my mind! Fail! LOL
Since I already had all the ingredients for cupcakes, I figured why reinvent the wheel? There is a cereal out there that has perfectly shaped marshmallow shamrocks in it already! That’s right….Lucky Charms. 🙂 Especially around this time of year, they sell a special edition that is all green shamrock marshmallows. Perfect!
So instead I made some Lucky Charms St Patrick’s Day cupcakes. I know this recipe has been done before but I have not seen it done with these special edition Lucky Charms! 😉
How to make the cupcakes
I just used a French Vanilla cake mix for this recipe. After I mixed up the batter, I decided to put some of the Lucky Charms cereal into it. In hindsight, I would have chosen not to do this. Everyone in the family agreed to leave the cereal out next time. The bits of cereal were an unpleasant texture after being baked. They didn’t taste bad, they just were a little soggy it seemed.
The marshmallows in the cupcakes were good though, so you would be fine to just add those to give a little color to the actual cupcakes. That is what I will be doing in the future. However, if textures do not bother you then adding the cereal would not be a problem.

When scooping the batter into the cups, I like to use a Pampered Chef medium scoop. It makes the job so easy and it is a handy tool for making cookies as well.
Just be prepared, the cupcakes don’t come out of the oven looking picture perfect. Thankfully we are adding frosting to the top! 😉
Pipe on some frosting
For the frosting, I used a delicious buttercream recipe that I use for all my cupcakes. The frosting is light and creamy and easy for piping onto the cupcakes. It is included in this recipe below. Trust me, it is soooooo good, you will almost want to eat the frosting by itself!
Tips for frosting cupcakes
I recently bought a bigger tip to frost cupcakes with and it made a huge difference! The frosting not only looks better and more professional, it made it so much easier to pipe on the frosting as well. I frosted these cupcakes in no time at all!
Instead of buying piping bags, I just use gallon sized Ziploc bags and clip off one corner for the tip to fit through. There is no need to use a coupler either. I saw a great tip recently to fill your piping bag (or Ziploc bag). Use a BIG cup and put the bag inside it. Fold the edges down around the cup, then fill the bag. This was so much easier than trying to have someone else hold the bag open while you fill it. It is easier to refill as well without getting frosting all over!
Mr. Wonderful sorted out some marshmallows from the cereal while I was frosting cupcakes. He put them into a separate dish. This made it easier to put them on top of the frosting instead of trying to sort them out as I went. He is such a good helper. 🙂
